Bühler: Global Cocoa Processing on the Rise – Appenzell at the Center

The Bühler production site in Appenzell, Switzerland, has emerged as a key location in the global cocoa processing industry. At a time when cocoa markets are shaped by volatile prices, structural constraints in cultivation, and growing demand for local processing, the Appenzell plant has taken on a central role in delivering the technology required to meet these challenges.

The Role of Appenzell

Since 2022, the Appenzell site has been responsible for manufacturing and assembling the main components of Bühler’s cocoa processing lines. This includes machines for the infrared pre-treatment of cocoa beans, as well as roasters and coolers that are central to developing the flavor and aroma of cocoa. Roasting is not only essential for product quality but also for ensuring efficient processing into semi-finished goods such as cocoa butter and cocoa mass, both of which are crucial for chocolate production.

The site employs around 100 people, most from the surrounding region. Its work combines engineering, polymechanics, assembly, and automation. A defining aspect of the Appenzell plant is its commitment to vocational training: 21 apprentices are currently in education, and the site regularly sees young employees qualify for national skills competitions. This investment in training ensures the availability of technical expertise for the future.

Market Context

Cocoa prices have remained at high levels for nearly two years due to poor harvests, climate-related pressures, and crop diseases in major producing countries. At the same time, cocoa trees are limited to specific climate zones and require several years before bearing fruit. These conditions have created incentives for cocoa-producing countries to expand local processing capacity. By processing beans closer to the source, countries aim to secure greater value creation, reduce transport costs, and strengthen their domestic economies.

Bühler’s Global Network

The solutions produced in Appenzell form part of a broader system of technology and services offered worldwide. In cocoa-producing regions such as West Africa, Bühler maintains a local presence with service specialists and training centers, including the Cocoa Innovation and Competence Center in Abidjan, Ivory Coast. This infrastructure allows customers not only to access advanced machinery but also to receive technical training and long-term support. The combination of Swiss manufacturing and local expertise has contributed to an increase in demand for Bühler’s processing systems.

Examples of Application

Recent projects illustrate how the equipment manufactured in Appenzell contributes to developments in the global cocoa industry. In Uganda, Bühler is working with a trading company to establish the country’s first industrial cocoa processing plant. The project will allow for the local production of cocoa mass, butter, and powder. In Greece, a chocolate manufacturer has modernized its production facilities by integrating cocoa processing, gaining greater control over the value chain from bean to finished product.

The Appenzell site demonstrates how regional expertise can play a decisive role in addressing global industry challenges. By combining advanced machine production with a focus on training and workforce development, the plant supports both local employment in Switzerland and the international expansion of cocoa processing capacity. As producing countries continue to increase their focus on local value creation, the technology and expertise originating in Appenzell are likely to remain a significant factor in the industry’s development.
