Bühler’s strategic advantage lies in its dual focus on advanced cocoa processing technology and a solid regional presence. Its Cocoa Innovation and Competence Centre in Abidjan, Ivory Coast, helps local clients develop relevant skills, complemented by ongoing support from Bühler’s Flavour Creation unit in Uzwil.

The Appenzell production site plays a crucial role in this surge, where precision engineering and premium manufacturing standards converge. Bühler has invested significantly in this location, producing key components for cocoa processing lines that have been shipped globally.

The facility in Appenzell manufactures machines that utilise infrared technology to pre-treat cocoa beans before they are broken and hulled. The resulting nibs are then roasted, a critical step to unlock the beans’ flavour and transform them into semi-finished products like cocoa butter and cocoa mass, vital for chocolate production.
